Notably, she served as the Minister of Mental Health and Addictions of British Columbia, a position that underscored her commitment to healthcare advocacy. Prior to her political career, Darcy held influential positions within trade unions, demonstrating her dedication to public service and labor rights.

Darcy's tenure as the National President of the Canadian Union of Public Employees, from 1991 to 2003, was historic, as she was only the second woman and the second Jewish-Canadian to hold this office. Following her presidency, she took on the role of business manager for the Hospital Employees' Union from 2005 to 2011.
